Intermittent operation is totally normal! It actually helps the flour and water mix more evenly and mimics the process of hand kneading. This also makes it easier for the mixer to handle larger batches of dough.

How much flour can the dough mixer handle?

The mixer can handle anywhere from 2 to 6.2 lbs (900 to 2800 grams) of flour. Going below or above this range might affect the texture of your dough, so it’s best to stick to this capacity for the best results.

Can I adjust the mixing speed or fermentation temperature?

The mixing speed and fermentation temperature are set, but you can adjust the Mixing Duration and Fermentation Duration to suit your recipe or preferences.

Does the package come with a recipe book?

While we don’t include a recipe book in the package, we’re working on updating the manual and adding new recipe videos to the product page. Recipes for stand mixers are also applicable — you might need to tweak the proportions slightly.

Dual Mixing & Seasonal Fermentation Modes: This dough maker offers two mixing functions and two fermentation options for year-round baking flexibility. Use MIX mode to knead smooth, elastic dough, and BLEND mode to evenly mix fillings. It features both Winter and Summer Fermentation Modes (Summer: 100–108°F, Winter: 100–117°F), allowing you to manually set the fermentation time based on your environment. Whether it’s cold or warm, you can always achieve perfectly fermented dough with ease.
9.5Qt Capacity: The electric dough mixer comes with a 9.5Qt mixing bowl, capable of handling flour weights from 900g to 2800g. The maximum flour weight for fermented dough is 2500g. We recommend a flour-to-water ratio of 100:50/60, but you can adjust the ratio and add other ingredients based on your needs.
Flexible Time & Mode Settings: Joydeem dough maker offers fully adjustable settings — mixing time (5–30 min, 1-min intervals) and fermentation time (5–120 min, 5-min intervals). It features four modes: Mix, Ferment, Mix + Ferment, and Blend,allowing you to knead dough, ferment, or mix fillings with ease. One machine meets all your baking and cooking needs.
Stainless Steel Material: The mixing bowl and blade are made of durable 304 stainless steel, ensuring longevity and easy cleaning. If any parts break under normal use within one year (for home use only), we offer replacements.
