A: Sticking is a common issue if the dough consistency or flouring technique isn’t quite right. To prevent this:
Dough Recipe: Ensure your dough is not too wet. A good starting ratio is one medium egg per 100g of flour. Knead it well until it’s firm.Resting: Always let the dough rest in the refrigerator for at least 30-60 minutes after kneading. This relaxes the gluten and makes it less sticky.Flouring: Generously dust the dough ball and feed it through the roller on a thicker setting first. Lightly dust the resulting sheet with flour each time you pass it through, especially before cutting. However, avoid excessive flour on the rollers themselves, as it can prevent the dough from engaging properly.
Q2: Is the machine really suitable for a small restaurant or commercial kitchen?

IMPORTANT TIPS
Water : four = 3 : 10, the dough should be as dry as possible.If mixture is too thick or too thin, dough will be sticked on roller and knife easily.If dough goes faster than cutting noodles, it will fold and pile up easily.Adjust gap to max. while cutting noodles to prevent pressing sheet again.Thickness of dough is appr. 0.3-5mm, width of noodles are 3mm and 9mm.


No need to assemble the knife for switching, up for thin noodle crust and down for making noodle.
Roller adjustment knob: adjust the thickness of the dough, both sides of the same rotation adjustment, so that the thickness of the dough is uniform
Cutter adjustment knob: adjust the width of noodles, tighten the knob, grind out narrow noodles, loosen the knob, grind out the wide noodles, both sides of the knob need to adjust the same
